Chalk Hill Clematis: Combo: Olive Oil & Red Wine Vinegar

A wonderful box set of 2 bottles: 1 extra-virgin olive oil and 1 red wine vinegar.

OLIVE OIL - Above Sonoma's Chalk Hill Valley, olive groves flourish on our small estate-farm, pampered by an ideal growing climate and nutured by a rocky soil rich in minerals and volcanic ash. We handpick and custom blend our olives producing an oil with delicate freshness and assertive peppery finish.

RED WINE VINEGAR - We produced this red wine vinegar on our Chalk Hill property using an authentic acetaia ('osh -a -'tie -a). We start with Dry Creek Gamay in small casks of various Italian woods including cherry, ash, acacia, mulberry and chesnut. We then blend and transfer it to larger oak barrels for one year to complete the aging process. This vinegar is unfiltered and unfined.
