We produced this red wine vinegar on our Chalk Hill property using an authentic acetaia ('osh -a -'tie -a). We start with Dry Creek Gamay in small casks of various Italian woods including cherry, ash, acacia, mulberry and chesnut. We then blend and transfer it to larger oak barrels for one year to complete the aging process. This vinegar is unfiltered and unfined.
